Hungarian Sausage and Vegetable Stew (Serves 4–6)


Instructions:

1️⃣ Sauté the Base:
In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and stir for another minute.

2️⃣ Add Peppers & Sausage:
Add the sliced sausage, bell peppers, and carrots. Cook for 5–7 minutes, stirring occasionally, until the sausage browns slightly.

3️⃣ Season:
Sprinkle in the sweet paprika (and hot paprika if using). Stir well for 30 seconds — don’t burn the paprika! Add the caraway seeds if using.

4️⃣ Add Veggies & Broth:
Add the diced potatoes and tomatoes. Pour in the broth. Season with salt and pepper.

5️⃣ Simmer:
Bring to a boil, then reduce heat and simmer for 25–30 minutes, or until the vegetables are tender and the flavors meld.

6️⃣ Serve:
Taste and adjust seasoning if needed. Ladle into bowls and garnish with fresh parsley.
